I love summer! The long days, warm nights and impromptu beach days... But summer is also a great time to take advantage of all the fresh, seasonal fruits. My favorite? Strawberries!
There’s nothing like biting into a juicy, organic strawberry. As much as I love eating strawberries a la cart (or dipped into chocolate fudge...), I love adding them to overnight oats.
Strawberry Overnight Oats is the best of most worlds: fresh strawberries and oatmeal. The best part about overnight oats? There’s absolutely no cooking! I just prepare my Strawberry Overnight Oats the night before, then grab & go in the morning.
For an added boost of nutrients, I’ll stir in some Energy Bomb mix. The 5 better-than-coffee superfoods in this mix give me the long-lasting energy I need to get through the day.
Strawberry Overnight Oats Recipe
Serves 1, vegan
- 2 tsp Energy Bomb mix
- 350ml plant-based milk
- 90g rolled oats
- 70g organic strawberries, sliced
- ½ banana, sliced
- Combine all ingredients in a jar.
- Cover and refrigerate overnight.
- When ready to eat, add toppings (if using) and enjoy!
