VEGAN, GLUTEN FREE
This salad combo will fill you up with loads of veggies and a super tasty dressing.
The Super Green Mix is the easiest way to sneak more greens and fibres in your daily diet thanks to the 6 green superfoods it contains.
INGREDIENTS:
- 200 g mixed greens
- 190 g brown rice
- 80 g sweet corn
- 1 diced tomato
- 90 g black beans
- 1/2 thinly sliced red onion
FOR THE DRESSING:
- 1 ripe avocado
- Squeeze of fresh lime juice
- 1 clove garlic
- salt and pepper to taste
- 120 ml cup water
- 1 tsp Super Green Mix
- Toss all the ingredients for the salad in a bowl.
- Add all ingredients for the dressing except the Super Green in a blender. Mix until smooth and creamy and then add the Super Green. Stir well.
- Spoon the dressing over the salad.
- Enjoy!
