Kristel: 'While Michael was having chemo I watched the movie Forks over Knives (available on Netflix) and that was really it for me. Kristel turned plant-based cold turkey after watching the movie Forks over Knives over 6 years ago and healed her long-term eczema as a result. Michael turned towards a 90% plant-based diet after his chemo with the help of Kristel and made the total switch after a couple of years.
'It was not always easy. I think I ate the same tomato-zucchini dish for dinner the first 3 months, because I wasn't sure what to cook. I always enjoyed cooking, so even though I didn't read a lot about it, I just started to test and learn.
