Chocolate Berry Overnight Oats

 

This heavenly recipe and beautiful pictures were created by one of our favourite bloggers: Anna (plant-fueled). This filling breakfast recipe includes the making of your own berry compote, which tanginess balances perfectly the rich flavour of cacao.

 

This vegan recipe is all the more healthy that it contains a full serving of Chocolate Lover, a blend of superfoods naturally high in antioxidants and many minerals. What's more, it's easy to prepare it the day before to have your quick breakfast ready in the morning - ideal for those days where you barely have 5 minutes to finish getting ready!

Chocolate Berry Overnight Oats

INGREDIENTS:

TOPPINGS:

  • 3 stems rhubarb
  • 70g mixed berries
  • 1 tsp coconut sugar
  • juice of 1 lemon

DIRECTIONS:

  1. Mix all the ingredients for the oats in a jar, stir well and place in the fridge overnight.
  2. Cut the rhubarb into pieces and place it together with the lemon juice and the coconut sugar in a pan.
  3. When the rhubarb is softened, add the berries. Stir well.
  4. Let it simmer for some more time until everything is well combined.
  5. When everything is combined, place it in a bowl and let it cool down.
  6. The next day, layer the overnight oats with the compote
  7. Enjoy!
