Don't worry, because this apple pancake recipe goes just as easily and is warming too (AND you can top it with as many extras as you like). 

Is there a better combination than apple and cinnamon in any kind of baking dish? We think: (almost) no. So it's a no-brainer that both go into these deliciously fluffy pancakes. But you probably already knew that when you read the title. What's special about this apple pancake recipe (and what grandma probably never had on hand in the past): we put superfoods in it. And not just one mix, but two that give you real plant power. 

 

Plant Protein is a vegan protein mix that works well in any kind of baking, as it is relatively neutral in taste. With a slight sweetness from banana and lucuma, it fits perfectly into this pancake recipe. It also makes the pancakes extra fluffy and is full of plant-based protein from rice and peas. So you'll be even able to convince all non-vegans when you whip up these apple pancakes at your next brunch.

Apple Cinnamon Pancake Recipe

Makes 8 pancakes

Ingredients:

  • 2 tbsp Plant Protein mix
  • 2 tsp Energy Bomb mix
  • 1 apple, finely diced
  • 100g oats
  • 350ml plant-based milk
  • 50g unsweetened applesauce
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 tbsp flax seeds
  • 1 tbsp ground cinnamon
  • 1 tsp baking powder
  • toppings (e.g., maple syrup, fruit, nuts, etc.)

 

Directions:

  1. Place all of the ingredients except the diced apple in a high-speed blender and blend until smooth.
  2. Set the batter aside for a few minutes to let it thicken.
  3. Fold in the diced apple.
  4. Heat a large frying pan (if your pan’s not non-stick, use coconut oil to grease it). 
  5. Spoon ¼ cup of the batter for each pancake onto the pan. 
  6. Flip when you start to see air bubbles on the top side.
  7. Cook on both sides and repeat with the rest of the batter. 
  8. Stack the pancakes up, add your favourite toppings and serve.
